Brinjal curryleaves pepper fry:

Ingredients:

Brinjal -1/2 kg cut into long pieces 
Curry leaves- 1 cup
(Small onion -15 nos
Garlic. -10nos
Ginger. -1 inch piece
Tomato. -1no
GratedCoconut -1tablespoon
Pepper. -1tablespoon
Cumin seeds. -1tsp
Coriander seeds -3 tsp
Red chilly -2nos) Grind all these
ingredients with 1/3 of curry leaves. Gingelyoil -3 tablespoon
Salt to taste

Method:

Heat a thick bottom iron vessel and add gingerly oil and add 1/2 of the curry leaves. When leaves get roasted add grinded paste and saute till the oil oozes out.Then add brinjal and mix it with the paste and cook for 5minutes.Then add a cup of water and required salt and cover it with a lid and keep it in low flame. After 15 minutes sprinkle the rest of the curry leaves in the fry and now it is ready to serve.
