Ingredients:

Carrot - 2
Chow chow / Bangalore kathirikai - 1
Drum stick - 1
Brinjal - 3(small)
Raw banana - 1
Coconut oil - 1/4 cup
Salt
(Potato, beans, broad beans, yam can also be added for normal cooking)
To grind:
Coconut - 1 cup
Garlic - 3 cloves
Cumin / jeera - 1/2 tsp
Green chilli - 1 or 2
Curry leaves - hands full
Grind the above ingredients in a mixie with out adding water.
To splutter:
Mustard seed - 1/2 tsp
Coconut oil
Curry leaves

Method:

Cook all the vegetables with little amount of water. When half done add salt. Cook until it is done. Be sure no water is left over then add the grinded coconut. Check for salt. Add the coconut oil. Mix it well and close with a lid.
Heat a small frying pan add coconut oil when it is hot add mustard seeds and curry leaves. Add this with aviyal.
